This is a
recipe that we usually make in a pressure cooker. I found this slow cooker
version in The Indian Slow Cooker by Anupy Singla and it turned out quite
nicely. As usual, I cut back on all the spices, so feel free to adjust them to
your tastes.
Spiced
Cauliflower and Potatoes
2 bags
cauliflower, defrosted
1 lrg
potato, peeled and chopped
1 onion,
chopped
1 tomato,
diced
½ tsp ginger
paste
½ tsp garlic
paste
2 green chilies,
slit
1 tsp cumin
seeds
½ tsp chili
powder
½ tsp garam
masala
½ tsp
turmeric powder
Salt to
taste
Put all the
ingredients in the slow cooker with ½ cup of water. Stir well, and cook on low
for 4 hours. Stir once while it’s cooking, so that the potatoes on top have a
chance to cook at the bottom. When it’s done, if there is too much liquid in
the pot, place it on high for ½ an hour and leave the lid off. Serve hot with chapatti
and kachumbar.
